The BBQ Doctor – Recipe of the Week – Taco Soup

Happy Fall Ya’ll! With the approach of cooler weather we start thinking about delicious Soup recipes… There is nothing better than a warm bowl of soup on a cool fall day! 

The BBQ Doctor’s Recipe of the Week – Taco Soup

1 lb. ground Turkey
or lean ground beef; 1 large onion, chopped; 1 pkg. Hidden Valley Ranch Dressing mix; 1 pkg. taco seasoning mix; 1 – 16oz. can Pinto Beans; 1 -16oz. can Chili Beans (hot or mild); 1 -16oz. can whole kernel corn; 1 – 8 oz. can diced Mexican style tomatoes (Rotel); 1 -8oz. can diced tomatoes.
Brown meat and onion and drain. Mix ranch dressing and taco seasoning into meat. Without draining, add all of the other ingredients. Simmer 1 hour. Top with Sour Cream and Cheese and serve with Tortilla Chips or Fritos.  Serves 4-6
